Dairy producers and their cooperatives constantly feel the pressure to remain competitive and reduce their costs. However, the current discussion is concentrated on the perspective of the price paid per liter of milk, and through this project the partnership intends to focus on the issue of production cost, which is something the producer can act on, unlike what happens with the price. Overcoming this initial barrier will be fundamental, and should be carried out through the characterization of systems related to energy and water consumption in order to clearly show producers the weight that resource consumption has on their costs, in order to later raise awareness and train relatively actions to be taken to reduce it. On the other hand, the scarcity of resources, the unstable supply of raw materials and the degradation of the environment with repercussions on climate change and the loss of value of products have highlighted the limits of the current economic model. In this context, the Circular Economy (CE) model, encompassing the principles of bioeconomy, has occupied a growing space in European and Portuguese policies and is seen as an alternative means of pursuing the path of prosperity, while reducing consumption and dependence on primary materials, energy and water.
