Description:
The course is strongly focused on product and packaging innovation, in order to respond to evolving market needs, training professional figures to be included in the research & development area, the engine of production and organisational change in companies.
The Product Development course therefore aims to train professionals able to:
- improve the health and nutritional aspect of food products, without sacrificing their quality and typicality, to meet the changing needs of consumers and improve disease prevention;
- develop functional foods that can compensate for nutritional deficiencies and have preventive action, also starting from little-used raw materials, traditional ingredients and by-products of the food industry.
- Developing sustainable products, reducing the environmental impact of the production process and packaging by adopting raw materials from waste, by-products and others, fully in line with the objectives of the European 'Green Deal'.
The course includes the adoption of digital technologies for market analysis, production data processing, tracking and 'smart' labeling.
